What you need:
10 potatoes
Salt, black pepper
1/2 cup olive oil
1/2 cup fresh parsley
Wash the potatoes and cut them into quarters. Put in a pot and cover with water, add salt and bring to a boil, then lower the heat and cook for 15 minutes until they are soft but not too soft.
Heat your over to 200° C (392° F). Place a baking sheet on a pan and spread some of the olive oil on it.
Put the potatoes on the pan and carefully flatten them using your hands or a masher, so that they are a bit flat but not entirely mashed. Pour the rest of the olive oil over them and add salt and pepper.
Roast for 15-20 minutes until golden brown and remove from the oven. Then sprinkle the parsley and serve.
