Ingredients:
- 100g melted butter + 1/2 cup oil.
- 1/4 cup white sugar (for sprinkling on the pan).
- 1 cup brown sugar.
- 3 eggs.
- 1 cup sour cream or yogurt.
- 3/4 cup milk.
- 1 tbsp vanilla extract.
- 2 shots of espresso or 1/4 cup strong coffee.
- 2 1/2 cups self-raising flour.
For the cardamom streusel:
- 1 cup all-purpose flour.
- 80g cold butter, cut into cubes.
- 1/2 cup brown sugar.
- 1/2 tsp ground cardamom.
- 1/4 tsp salt.
Instructions:
1. Preheat the oven to 180°C (350°F).
2. Grease a loaf pan with butter. Sprinkle sugar over the butter, shake it around and tap out any excess.
3. In a bowl, mix the eggs, sour cream, milk, vanilla, and coffee.
4. Gradually fold in the flour.
5. Combine the streusel: mix all the streusel ingredients together and rub them into crumbs using your hands or pulse in a food processor.
6. Pour half the batter into the pan, sprinkle with half of the streusel, then add the rest of the batter and top with the remaining streusel.
7. Bake for 40 minutes. Remove from the oven and let it cool before serving.
