Ingredients (serves 6):
- 1 (8-inch) round cake pan or 2 loaf pans
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon instant coffee
- 2 teaspoons ground cinnamon
- 3 large eggs
- 2 cups boiling milk or orange juice
- 5 tablespoons (2.5 ounces) softened butter
- 3 tablespoons honey
For decoration:
- 1 tablespoon (0.5 ounce) melted butter, at room temperature
- 6 tablespoons powdered sugar
- 1 tablespoon milk or plant-based milk
- 1/2 cup toasted sliced almonds
Instructions:
- Preheat the oven to 300°F. Grease the cake pan.
- In a large bowl, combine the flour, baking powder, baking soda, brown and white sugars, instant coffee, and cinnamon until evenly mixed.
- In another bowl, whisk the eggs with the boiling milk (or orange juice), softened butter, and honey. Combine the wet and dry ingredients and pour the batter into the prepared pan. Bake for 35 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool.
- For the decoration: Mix the melted butter, powdered sugar, and milk until smooth. Drizzle over the cake and sprinkle with toasted almonds.
