Baked fish filets

Quick and easy prep, short baking time, gives delicious weekend meal

Ingredients:

  • 8 filets of white fish
  • 5-6 tomatoes
  • 1-2 tbs. olive oil
  • 2-3 cloves of garlic
  • Chopped coriander
  • 6-7 chili peppers
  • 1/2 cup dry white wine

For the sauce:

  • 1/4 cup olive oil
  • 6 cloves of garlic, diced
  • 1 tsp. sweet paprika
  • 1/2 tsp. smoked paprika
  • 1 tsp. salt
  • Ground black pepper

Instructions:

  • Heat over to 180° c (356° f)
  • Pad down dry your filets
  • Slice tomatoes to 1cm thick slices and place on the bottom of the baking tray with olive oil
  • Cover with garlic and half the coriander, salt and pepper
  • Place fish filets skin down
  • Put chili peppers around the fish
  • Cover with the rest of the coriander and add the wine
  • Bake for 15 minutes
