Cheesecake recipe:
Ingredients (for a 10x20 cm pan):
- 2 cups ground Petit Beurre biscuits
- 150 grams of melted butter
- 1 kg cream cheese (30% fat)
- 5 eggs
- 50 grams flour (about 2 tablespoons)
- 1 cup sugar
- Process the biscuits with the melted butter until fine crumbs form.
- Cut parchment paper to fit the bottom of the pan and grease it with cooking spray. Cut another piece for the sides of the pan, ensuring it reaches 10 cm high, and grease it as well. Press the biscuit mixture firmly into the base of the pan.
- In a mixer with a paddle attachment, slowly combine the cream cheese and sugar. Gradually add the eggs and finally the flour.
- Pour the filling over the crust and bake in a preheated oven at 200°C (392°F) for about 10 minutes. Reduce the temperature to 160°C (320°F) and continue baking for another 60 minutes, or until golden.
- The cake is ready when a toothpick inserted into the center comes out clean.
- Allow the cake to cool to room temperature, then refrigerate overnight, and serve chilled.
