Perfect onion soup in just ten minutes of prep

No need to wait for a rainy day to enjoy this incredible soup: a fragrant onion soup that everyone will adore; bonus: it's made from especially inexpensive ingredients

Ingredients (5 serves):

- 5 medium onions
- 50 grams of butter
- 3 tablespoons olive oil
- 1/2 cup white wine
- 2 tablespoons flour
- 6 cups water (or chicken broth)
- Salt
- Optional upgrades: a handful of croutons (homemade preferred), a handful of grated Parmesan or Gruyère cheese

Instructions:

  1. Peel the onions and slice them into thin strips.
  2. Heat some olive oil in a pot and add all the onions. Season with salt and stir. Add the butter and sauté the onions on very high heat for about five minutes. For a browner color, you may continue frying for an additional 5 minutes until slightly caramelized (optional).
  3. Once the onions have softened and turned a gentle golden color, add the flour and mix well. Season with salt.
  4. Add the white wine, stir for about half a minute, and allow the alcohol to evaporate.
  5. Add the water or broth, stir thoroughly, and cook covered for about 15 minutes.
  6. Serve in bowls. Optionally, top with some croutons and grated cheese before serving.
