Ingredients (5 serves):
- 5 medium onions
- 50 grams of butter
- 3 tablespoons olive oil
- 1/2 cup white wine
- 2 tablespoons flour
- 6 cups water (or chicken broth)
- Salt
- Optional upgrades: a handful of croutons (homemade preferred), a handful of grated Parmesan or Gruyère cheese
Instructions:
- Peel the onions and slice them into thin strips.
- Heat some olive oil in a pot and add all the onions. Season with salt and stir. Add the butter and sauté the onions on very high heat for about five minutes. For a browner color, you may continue frying for an additional 5 minutes until slightly caramelized (optional).
- Once the onions have softened and turned a gentle golden color, add the flour and mix well. Season with salt.
- Add the white wine, stir for about half a minute, and allow the alcohol to evaporate.
- Add the water or broth, stir thoroughly, and cook covered for about 15 minutes.
- Serve in bowls. Optionally, top with some croutons and grated cheese before serving.
