These veggie-packed chicken patties are irresistible

Perfect for hot summer days, the cauliflower adds a unique lightness, and there's no need to bake or cook the vegetables—the microwave gets the job done in a snap

Ingredients (serves 10):
  • 1/2 medium cauliflower
  • 1 cup packed spinach leaves
  • 1/2 medium leek, sliced
  • 1 small onion, peeled and coarsely chopped
  • 1 slice of bread, soaked and squeezed
  • 9 ounces ground chicken breast
  • 1 egg
  • 2 tablespoons bread crumbs
  • Salt, ground black pepper to taste
  • Oil for frying

Instruction:
  1. Break the cauliflower into florets and microwave for 4 minutes until tender. Let cool slightly, then pulse in a food processor until coarsely chopped. Transfer to a bowl.
  2. Microwave the spinach leaves for about a minute. Chop finely.
  3. Microwave the leek for 2 minutes.
  4. In a food processor, blend the leek, onion, and bread slice until smooth. Transfer the mixture to the bowl with the cauliflower. Add the chicken, egg, bread crumbs, salt, and pepper. Mix until well combined.
  5. Form the mixture into patties about 2 inches in diameter and flatten them.
  6. Heat a little oil in a skillet and fry the patties on both sides until browned.
