Ingredients (for a 26 cm diameter pan):
- 3 eggs
- 3/4 cup (180 ml) oil
- 3/4 cup (180 ml) sour cream or yogurt (fat content according to preference)
- 1 tablespoon sugar
- 1/2 teaspoon salt
- Optional (highly recommended!): 2 teaspoons of fresh or dried chopped oregano OR 2 tablespoons of fresh chopped basil
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground black pepper
- 2 1/4 cups (315 grams) self-raising flour
For the filling and topping:
- About 1 cup (240 ml) ready-made pizza sauce
- 1 1/2 cups shredded yellow cheese
- About 1/2 cup toppings of choice (e.g., chopped olives, corn, etc.)
Instructions:
- Preheat the oven to 180°C (350°F). No need for convection. Grease the pan.
- In a bowl, break the eggs and whisk them well. Add the oil, sour cream (or yogurt), sugar, salt, and all the spices. Whisk until you get a smooth mixture. Now, add the flour and stir just until the batter is thick and homogeneous (avoid overmixing).
- For the filling and topping: Pour half of the batter into the pan. Spread half of the pizza sauce, half of the cheese, and half of the toppings over it. Pour the remaining batter so that it covers the first layer. Spread the remaining sauce, cheese, and toppings on top.
- Bake for about 40 minutes, or until the top of the cake is browned and a skewer inserted into the center comes out mostly dry, possibly with some red sauce. Remove with care, allow it to cool slightly, and serve.
Storage: Can be kept up to 4 days in the refrigerator.
