Bounty bites
Ingredients:
• 200 g (7 oz) shredded coconut
• 60 g (2 oz) softened or melted butter
• ½ cup coconut cream
• 200 g (7 oz or ½ can) sweetened condensed milk
For the chocolate coating:
• 200 g (7 oz) dark chocolate
• 2 tablespoons oil

Instructions:
1. In a medium bowl, combine all ingredients and mix well.
2. Transfer to a loaf pan lined with parchment paper. Press firmly into an even 1–2 cm (½–¾ inch) layer. Chill in the fridge for at least 1 hour or until ready to continue.
3. When ready to coat, melt the chocolate in short pulses in the microwave. Stir in the oil until smooth.
4. Remove the coconut mixture from the fridge, cut into cubes or bars, and dip each piece in the melted chocolate.
5. Coat on all sides and place on a tray lined with parchment paper. Chill until set. Store in the fridge until served.
