Ingredients:
- 1 tablespoon of oil
Salmon:
- 1 pound of salmon fillet, skin and bones removed

Sauce:
- 1/3 cup soy sauce
- 1/4 cup white wine
- 1/4 cup sweet chili sauce
- 1/4 cup mirin
- 2 tablespoons sesame oil
- 2 tablespoons roasted sesame seeds, dry-toasted in a pan
For serving:
- sliced chili pepper
- sliced green onion
Instructions:
- Cut the salmon into cubes. In a small bowl, mix all the sauce ingredients.
- Heat a pan, add the oil, and sear the salmon for about a minute on each side until browned. Remove to a plate.
- Add the sauce to the pan and cook for about a minute until it slightly thickens. Add the salmon cubes and cook for another minute, basting with the sauce using a spoon.
- Garnish with chili pepper and green onion and serve immediately, preferably on a bed of white rice or mashed potatoes.
