A quick and easy recipe for oatmeal chocolate chip cookies is just what we need as the week winds down. With only minor switches, the cookies can be a vegan treat filling the house with a comforting and inviting smell and the stomach with delightful pleasure.

- 100 grams of dark chocolate
- 1 tablespoon olive oil or coconut oil or melted butter
- 1 egg or 1/3 cup almond paste
- 1 cup maple syrup or date honey or agave syrup – these can all be omitted to reduce sweetness
- A pinch of salt
- 1/2 cup oatmeal
- 1 teaspoon baking powder
- 100 grams of dark chocolate broken into chips
Heat oven to 175° C (347° F)
In the microwave melt the chocolate with olive oil using 30 sec. pulses
Stir the egg, salt, and maple syrup into the melted chocolate
Add oatmeal and baking powder to get a thick and sticky dough
Add chocolate chips and stir some more
Use two tablespoons to Scoop cookie dough and using wet hands shape them into balls
Bake for 12 to 15 minutes and take out to cool
