Ingredients:
- 3 large eggs
- 3/4 cup (150g) cane sugar
- 1/3 cup (60g) olive oil
- 1/2 cup (120g) orange juice
- A pinch of salt
- 1 cup (140g) whole spelt flour
- 1 packet (10g) baking powder
- 1/4 cup (25g) ground coconut

Instructions:
- Preheat the oven to 356°F (180°C) on the turbo setting.
- In a large bowl, whisk together the eggs, sugar, oil, and orange juice until smooth.
- Add the salt, flour, baking powder, and coconut, mixing just until combined, with minimal stirring.
- Transfer 1/3 of the cake batter to a separate bowl. Add the orange juice and cocoa powder, mixing until combined.
- Pour the white batter into a baking tin. Add the chocolate mixture on top. Using a fork or knife, swirl in circular motions from bottom to top to create a marbled effect (resist the temptation to overmix!).
- Bake for 35–45 minutes or until a skewer inserted into the center comes out with only moist crumbs.
