Just ahead of Rosh Hashana, one of the most important Jewish High Holidays which will be celebrated at the end of the week, here's a quick, easy recipe for a traditional apple tart to share with your loved ones at the start of the Jewish new year.

Ingredients:
- 24 cm ring baking mold
- 100 grams of chilled unsalted butter or 1/3 cup alongside 3 tablespoons (90 grams - 100 ml) of vegetable oil
- 1 and 3/4 cups (245 grams) of all-purpose flour
- 1 tablespoon of ground cinnamon
- 2 medium-sized sweet apples
- 2 tablespoons of lemon juice
- 3 room-temperature large eggs
- 3/4 cup and 2 tablespoons (175 grams) of sugar
- 2 teaspoons of vanilla extract
- 1/2 cup (120 ml) of milk (or soy, or almond milk for a dairy-free version)
- 1 tablespoon (12 grams) of brown sugar
- To decorate: 2 tablespoons of powdered sugar
Instructions:
1. Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit). Grease the ring mold, lightly flour it, and tap to remove excess flour.
2. Cut the chilled butter into cubes. Heat it in the microwave for 20 seconds, stir, and repeat the process until the butter is melted. Set it aside to cool.
3. In a bowl, mix the flour and ground cinnamon thoroughly and set aside.
4. Peel and core the apples. Cut them into quarters, and then slice each quarter into 3mm-thick slices. Transfer 12 of the apple slices to a bowl and add 1 tablespoon of lemon juice. Mix well.
5. Cut the remaining apple slices into 1x1 cm cubes and place them in a separate bowl. Add the remaining lemon juice and mix well.
6. In a stand mixer, attach the whisk attachment (or use a hand mixer) and beat the eggs at high speed for about 30 seconds. Add the sugar and vanilla extract, then mix for another 10 seconds until you get a pale and fluffy mixture.
7. Replace the whisk with the flat beater attachment (or use a spatula) and run the mixer at the lowest speed. Gradually add the flour and then the milk. As soon as a uniform batter forms, add the melted butter (or oil) in a slow, steady stream, then add the apple cubes. Continue mixing until the batter is uniform.
8. Pour the batter into the prepared ring mold and level it. Arrange the 12 apple slices evenly on top of the batter.
9. Sprinkle brown sugar evenly over the cake and bake for 40-45 minutes or until a skewer inserted into its center comes out dry. After the cake has cooled, dust it with powdered sugar.
