Ingredients for 6 servings:
- Olive oil
- 1 medium onion, diced
- 1 basket of favorite fresh mushrooms (shiitake, portobello, or wild), quartered
- 1 cup of cooked red/white/black beans
- 1 cup of cooked rice
- 2-3 tablespoons of soy sauce
- 1 tablespoon of spice mix for patties (baharat or ras el hanout)
- 1/2 cup of orange lentil flour or gluten-free breadcrumbs
For serving:
- 8 buns
- Sliced vegetables
- Preferred sauces
Instructions:
- Heat the oil in a pan and add the onion. Fry for a few minutes before adding the mushrooms. Stir and fry until browned. Transfer the onion and mushrooms to a food processor bowl. Add the beans, rice, soy sauce, and spice mix. Process until a sticky mixture with a slightly coarse texture is formed.
- If the mixture is too soft, add some lentil flour and gently mix. Taste and adjust seasoning.
- Moisten your hands and form 8 patties. A suitable-sized cutter can also be used.
- Lightly oil a pan and fry the patties for a few minutes on each side.
- For serving: Place a patty in a lightly toasted bun, add vegetables and preferred sauces, and serve.
