Isareli chef Assaf Granit holds on to Michelin star in Paris

Chef says based on the feedback received this year from restaurant guide, starting next year two stars are not out of reach; says is happy and proud especially at this time

For the fourth consecutive time, Chef Assaf Granit received a Michelin star for his restaurant in Paris, Shabour, as reported on Monday. At the ceremony held in Paris, attended by top chefs in France, Granit received one Michelin star, maintaining his prestigious rating in the renowned guide.

"This is our Oscar, the most prestigious rating," Granit told Ynet from the red carpet in Paris. "Based on the feedback we received this year from Michelin, starting next year, we can start thinking about two stars. I am happy and proud to maintain the star for four consecutive years. It's an incredible honor to walk on this red carpet and receive a Michelin star for Israeli cuisine at such a time.

"No matter where you look, you see chefs with stars. I'm mingling here among all my idols and can't believe it - Alain Passard, Alain Ducasse, standing next to me is a chef with six stars, he has three Michelin stars for his two restaurants. Judges from 'Top Chef' France are also here; I was a guest judge on their show."

Shabour restaurant opened in the first quarter of September 2019, after Granit already had one restaurant in Paris ("Balagan") and three more in London. Shabour received its first Michelin star three years ago, at the peak of the coronavirus pandemic. The menu at Shabour traverses the axis between Jerusalem and Paris - featuring French ingredients, French techniques, and spices from Jerusalem. The menu is seasonal and changes from week to week.
