Tiramisu, the wonderful Italian biscuit cake, with coffee and mascarpone cream flavors, has gone through decades of Americanization which added sugar and gelatin to the dessert. Originally it was not a fully solid cake, but a pouring, flowing cake, with Zabaione, rich in egg yolks and mascarpone.
Ingredients, for 4 servings:
200 grams of mascarpone cheese
1 cup of sweet cream
1/2 cup sugar
1 teaspoon vanilla extract
12 Savoiardi cookies (Biscotti, Lady Fingers or Cat's Tongue, they have several names)
4 shots of long espresso or 1 cup of extra strong macchinetta coffee
3 spoons of coffee/whiskey/cognac/amaretto liqueur
Cocoa powder
Preparation:
1. Whip the mascarpone cheese with the cup of sweet cream, 1/2 cup of sugar, and a teaspoon of vanilla extract.
2. Arrange the cookies in four individual plates.
3. Mix the coffee with the liqueur, and you can also pour the coffee directly from the espresso machine.
4. Pile the cream on the cookies with the coffee and sprinkle cocoa on top. Keep refrigerated or consume immediately.
