Ingredients:
1 kg. sliced chicken breast for schnitzels
Vegetable oil for frying
Marinade:
2 beaten eggs
1 tablespoon silan (date syrup)
1 tablespoon mustard
1/2 teaspoon ground black pepper
1/2 teaspoon salt
Coating:
1 cup mint leaves
2-3 cups golden breadcrumbs
4 tablespoons sesame seeds
1 tablespoon minced garlic
1/2 teaspoon salt
Preparation:
1. Mix all the marinade ingredients in a wide bowl. Add the schnitzels and mix well until thoroughly coated with the marinade. Chill for two hours.
2. Coating: Line a large plate with paper towels and arrange the mint leaves in a single layer. Microwave in 30-second intervals until the leaves are completely dry.
3. Crumble the dried mint leaves into a bowl. Add the remaining coating ingredients and mix.
4. Remove the bowl of marinated schnitzels from the refrigerator and mix slightly. Dip the schnitzels in the coating mixture on both sides.
5. Heat oil in a frying pan with a depth of half the pan and fry the schnitzels on both sides until golden brown.
