Try this easy-to-make orange salad, perfect for early autumn days
What you need
2 medium-sized sweet potatoes cut into small cubes
2 tsp. olive oil
1 apricot cut into small cubes (best pealed)
10 yellow dates cut into quarters
Seeds from one pomegranate
1 tsp fresh thyme
2 tbs. chopped mint
For dressing
1 tbs. mustard
Garlic
4 tbs. olive oil
2 tbs. vinegar
1/4 cup orange juice
1 tbs. brown sugar
What to do
1. Heat oven to 170° C (338° F)
2. Put sweet potato cubes on a pan with a baking sheet, pour olive oil and bake for 25 minutes until soft and golden. Then cool
3. Add to a bowl with the rest of the ingredients
4. Pour dressing and mix well
