Easy to make: decadent chocolate cake for Passover

Ingredients (serves 8):
  • 30 cm (12 inch) English cake pan
  • 3 oz butter
  • 1/3 cup (2.7 fl oz) oil
  • 2/3 cup (5.4 fl oz) water
  • 1/3 cup (1.8 oz) cocoa powder
  • 4.2 oz bittersweet chocolate, broken into pieces
  • 1 ¼ cups (8.8 oz) sugar
  • 1 egg
  • 5.3 oz (1 cup + 1 tbsp) kosher for Passover self-rising flour
  • 2 teaspoons baking powder
  • 1/2 cup (4 fl oz) yogurt
  • For garnish: 1/2 cup (1.8 oz) walnuts

Instructions:
  1. Preheat the oven to 320°F. Grease and lightly flour the pan using kosher for Passover flour.
  2. In a saucepan, combine butter, oil, water, and cocoa, and heat until just boiling. Remove from heat, add chocolate and sugar, and stir until the chocolate is completely melted. Cool slightly, add the egg, and mix until smooth.
  3. In a separate bowl, sift the flour and baking powder. Add to the chocolate mixture along with the yogurt and stir to combine. Pour the batter into the prepared pan and bake for about 50 minutes. Remove, garnish with walnuts, and let cool before serving.
