Ingredients:
- A 36x24 cm baking dish
- 3 eggs
- 3/4 cup (150g) sugar
- 3/4 cup (180ml) oil
- 1 cup (200g) plain yogurt
- 1 teaspoon vanilla extract
- 2 1/2 cups (350g) white spelled flour
- 1 teaspoon baking powder
- 35 pitted cherries
- A sprinkle of powdered sugar for decoration
Instructions:
1. Preheat the oven to 180°C (356°F) and grease the baking dish.
2. Whisk the eggs and sugar at high speed for 3 minutes. Lower the speed and gradually add the oil until fully incorporated.
3. Add the yogurt and vanilla extract and mix until well blended.
4. Sift the spelled flour and baking powder into a separate bowl. Mix until combined, and then fold them into the whipped egg mixture. At this stage, try to mix as little as possible.
5. Pour the batter into the baking dish and insert the cherries into it.
6. Bake for 30-35 minutes until the cake is set, and a toothpick inserted into the center comes out with a few moist crumbs. Remove, cool, dust with powdered sugar and serve.
