Ingredients:
1/4 cup thick oatmeal
1 cup spelt flour
1/2 cup cane sugar or brown sugar
1/2 cup chopped walnuts
1 teaspoon baking powder
2 eggs
1/2 cup canola oil or grapeseed oil
1 teaspoon vanilla extract
Pecans, for decoration
Preparation:
1. Preheat the oven to 180 degrees Celsius. Line a baking sheet with parchment paper.
2. Grind the oatmeal until there are very few whole pieces left. Transfer to a bowl.
3. Add the flour, sugar, walnuts, and baking powder, and mix until you get a uniform mixture.
4. Add the eggs, oil, and vanilla, and mix until uniform.
5. Ball the dough in ping pong ball-sized units from the mixture and place them on the baking sheet. Use a spoon if the dough is still liquid. Make sure to leave space between the cookies.
6. Press half a pecan into the center of each cookie and bake for about 20 minutes until the cookies are slightly golden at the edges.
