Ingredients (serves 6):
For the fish:
- 3 bell peppers, various colors
- 3 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 6 cloves garlic, crushed
- 2.2 pounds fresh salmon fillet, sliced into portions
For garnish:
- 2 cloves garlic, sliced
- A handful of fresh, chopped cilantro
Instructions:
- Preheat the oven to 350 degrees Fahrenheit. Grease a baking tray.
- Slice the bell peppers into half-inch thick strips and place them in the tray.
- Add two tablespoons of olive oil, paprika, turmeric, salt, black pepper, and half of the garlic to the tray, mixing until evenly coated.
- Rinse and thoroughly dry the salmon. Place it in the tray with the remaining garlic and a tablespoon of olive oil, mixing again until coated.
- Arrange the salmon pieces over the peppers, sprinkle with garlic and cilantro, and bake for about 15 minutes.
