The cocoa plant, considered the "food of the gods" by the Mayans and Aztecs, is now receiving renewed recognition thanks to studies that highlight its health benefits.
Raw cocoa is rich in powerful antioxidants, minerals (zinc, magnesium, iron, calcium, and phosphorus) as well as fiber. It bolsters our cardiovascular system and contributes to proper brain function.
However, in the Western world, most cocoa consumption is through chocolate or industrial chocolate drinks. Heating cocoa for processing causes cocoa to lose a significant portion of its nutritional value. In addition, to neutralize the natural bitterness of cocoa, manufacturers use excessive sugar which destroys the drink's nutritional value.
So how to consume healthier cocoa?
- Raw cocoa powder: While cocoa loses a significant portion of its health benefits in the industrial process, raw cocoa retains its natural components. You don't have to use cocoa powder only in chocolate. It can also be perfectly combined with chocolate desserts or truffles. You can add raw cocoa chips to granola (preferably after baking), to smoothies or energy drinks, and also use raw cocoa butter for natural cosmetics.
- A gradual reduction of the amount of sugar in cocoa recipes will get the body accustomed to enjoy the natural of the beans.
